Stuffed Peppers with Couscous

Two nights ago I made some Stuffed Peppers in the crock pot! They were delicious the only thing we noticed about the peppers is they were tender! I enjoyed that but my husband kinda missed the crunch you would get from a different method of cooking such as the oven.  It was still very filling, easy, and flavorful!

Also I only had 3 peppers so I made filling for 6 and the filling I had left I turned into a casserole.

Couscous Stuffed Peppers

3 Peppers, tops cut off and seeds removed
1/2 can Black Beans, drained and rinsed
1/2 can Kidney Beans, drained and rinsed
1 cup uncooked couscous, cooked according to the directions
1 large tomato, chopped
1 1/2 shredded mozzarella
1 tsp. salt
1/2 tsp. pepper
2 tsp. onion powder
2 tbs. minced garlic
1/4  cup fresh chopped parsley
1 jar marinara sauce

1. Spray slow cooker insert with non-stick spray

2. Cook couscous according to box/bag. Once cooked stir in black beans, kidney beans, tomato, mozzarella, salt, pepper, onion powder, minced garlic, and parsley.




3. Stuff peppers with couscous mixture. Really press the mixture in there tight.  Now as you fill the peppers pack them into the slow cooker.  Pour entire jar of marinara sauce over and around the stuffed peppers.

 
 
 
4. Cook on Low for 6 hours or on high for 3 hours.
