Spicy BBQ Veggie Sandwhich and French Fries with Cider Honey Mustard

So this dish is AMAZING!  Packed with flavor and heat, I am going to have to modify the BBQ sauce next time cause the spice was more than I can handle.  So keep that in mind when you are fixing this!

We have been loving our veggie summer.  Finding out how easy it is to fix a vegetarian meal and still be full!  It's so much easier than you think if you fix it right! Just because they are vegetables doesn't mean you have to cooking them steamed, or roasted! Give this BBQ sandwhich a try you won't be disappointed!

Dry Rub:

1/2 cup chili Rub
1/4 cup brown sugar
2 TBS. paprika
2 TBS. ground cumin
1 TBS. kosher salt
1 TBS. black pepper
2 TBS. Cayenne pepper

Spicy BBQ Sauce:

1 onion, chopped
4 TBS. butter
2 cups Vegetable Broth
1/2 Cup Ketchup
1 can canned Chipotle (I think this is where I over did it, Id suggest cutting it in half)
1/4  Cup Apple Cider Vinegar

Veggies:

2 Zuchinnis, sliced lengthwise
2 Parsnips, Sliced Lengthwise

1. Slice Veggies lengthwise, set aside.  Butter one side of the bread of your choice (we used locally made Ciabatta Bread) and set aside.

 
 


2. For the Dry Rub. Mix all spices together and toss veggies to evenly coat.
 


3. Now, this is where my wonderful Husband came to the rescue. After veggies have been coated take them and put them on the preheated grill.  Turning once to great those great grill marks.  The last few minutes add the bread you buttered, buttered side down until it crisps up.


4. While my husband was outside grilling I was busy working with this BBQ sauce.  Add onion and butter into skillet.  Cooking until onions are opaque.



5. Once onions are opaque. Add remaining ingredients. Bring to a boil and then turn down to a simmer and let sit for 15 to 20 minutes.



6. Once sauce has simmered toss it in your blender and blend until smooth. (Unfortunately I forgot to take a picture of this.)

French Fries

3 pounds red potatoes, chopped into the fry look (I had a mandolin I used to make it more even)
salt
3 quarts peanut oil

1. Chop potatoes.  Soak for at least 3 hours in water to remove some of the starch. After they have soaked put the out on paper towels and pat to dry.

 
 

2. Heat oil in pot.  Once oil is hot enough drop fries into pop. Try one fry first to see if the oil is hot enough.  You'll want to fry these in batches! So you don't over pack it. Fry each batch  about 4 or 5 minutes.
 
 

3. After each batch place fries on dry paper towels to soak up excess oil.  Once you finish the first fry on all the batches youll want to kick up the heat a little bit and toss fries in again (again fry in batches.  Now this time you just want to watch them until they begin to turn golden brown it'll take several minutes. Place fries on a new dry paper towel. Toss with Salt and any other seasonings



Cider Honey Mustard

1/4 cup Honey Mustard
3 TBS. hard apple cider

Mix well and dip fries
