Mediterranean Baked Shrimp Packets

Ok, maybe y'all noticed I didn't have "Taco Tuesday" after all. Unfortunately I was not feeling well, so my darling husband brought dinner home for us!! I think I'm a very lucky lady :)  But no worries I will be cooking up tacos on Friday!  I think it'll be pretty yummy!!!

For tonight though we made Shrimp Packets!  You want to know the greatest thing about "Packet" meals, its everything cooked all at once!  No need to worry about how you are going to cook the side or even the bigger question: What side to cook?  Nope it's all cooked and ready at the SAME TIME!!!  How amazing is that?  I think it's pretty amazing! You'll see more "packet meals" from me in the future!

Mediterranean Shrimp Packets

1 lb fresh or frozen peeled and deveined medium shrimp
1 cup quinoa
2 cups Vegetable broth
2 zucchini, halved lengthwise and thinly sliced
4 small red, green, or yellow sweet peppers
1 9 oz package of frozen artichoke hearts, thawed (or 2 fresh artichoke hearts cooked and chopped)
salt
pepper
Reduced calorie Italian salad dressing
lemon juice, optional

1. Thaw shrimp if frozen. Rinse. Set aside.

2. In a small sauce pan combine vegetable broth and quinoa. Bring to a boil and allow to simmer for about 20 minutes or until broth is gone. Set aside

3. Prep veggies. Cut four 24x18 - inch pieces of heavy foil. Fold each piece in half to make four 18x12 - inch pieces.



4. Divide quinoa, shrimp, zucchini, sweet peppers, and artichokes evenly among the 4 pieces of foil. Sprinkle with pepper and salt.  Drizzle with salad dressing.




5.  Bring together 2 opposite edges of foil; seal with a double fold. Fold remaining ends to completely enclose the food, allowing space for steam to build. Place packets in a single layer on a baking pan.


6. Bake at 425 for 25 minutes or until shrimp turns opaque
